Zuppa di Quattri Fromaggi Tortellini

Ingredients

  • 1 lb. RP's Quattri Fromaggi Tortellini (four cheeses)
  • 3 T olive oil
  • 1 small onion diced
  • 1 zucchini diced
  • 1 carrot diced
  • 1 green pepper diced
  • 3 cloves garlic crushed
  • 1/2 lb. shitake mushrooms sliced thin
  • 6 C vegetable broth
  • 1 C red wine
  • 1 C tomatoes chopped
  • 2 bay leaves
  • 1 t basil
  • 1/2 t oregano
  • salt and pepper
  • Parmigiano-Reggiano

Preparation

Heat the olive oil over medium high heat and add the garlic. Cook for about 30 seconds, do not brown, and add all of the diced vegetables and saute till slightly softened. Add all of the remaining ingredients except for the tortellini and cook for 15 min. Add the tortellini and simmer for 7 to 10 min. or until tender. Serve and top with fresh grated Parmigiano-Reggiano.
