Our gourmet pastas use 100% semolina flour, whole eggs (eggless varieties are also available) and filtered water for the freshest products. Our traditional flat noodles are lightly dusted with semolina and potato starch to prevent sticking. And we take special care to balance the flavors of our filled varieties with the pasta's natural flavor for a perfectly balanced taste sensation. Fresh Rolled Pasta
Rolled means the pasta dough is rolled flat and cut into strips of different widths to produce different shapes. It has a starchier surface which gives the sauce a good surface to cling to. Our fresh rolled pasta goes through a full kneading process. This produces lively and delicate pasta with a true "al dente" or "to the tooth" texture.
Fresh Extruded Pasta
In this process, the pasta dough is pushed through a die to give it a specific shape. Our fresh extruded pasta has a firm texture like dry pasta, while keeping the flavor and resilience of fresh pasta.
Filled Gourmet Pasta
Our goal is to keep the focus on - and the flavor in - the filling, so we make all of our fillings fresh from the finest ingredients, then quick-freeze the finished pasta to lock in all the delicious flavor.
